Perfect Father’s Day recipe
In case your family asks what you want to do for lunch or dinner on Father’s Day, tell them you want to grill out, then hand them this recipe. Yes, it’s probably not the best for you from a nutritional standpoint, but it’s mighty tasty! In moderation and for special occasions (like celebrating the awesome Dad that you are), it’s okay. Just make sure to follow good portion control - a serving of meat is about the same size as your closed fist.
To accompany this great main dish, fill up a grill basket with sliced zucchini, yellow squash, yellow or red bell peppers, and asparagus, then sprinkle a couple tablespoons of olive oil and balsamic vinegar over the top. Grill for about 10 minutes or until tender-crisp.
Let me know if you try either of these - Happy (early) Father’s Day!
Chili-Crusted Flank Steaks
The combination of chili powder, sugar and salt gives a nice juicy flank steak a sweet and spicy crust. Grilled red onions would make a nice addition, along with buttered corn and grilled bread.
What You Need in Order to Make 16 to 18 Servings
Ten tablespoons of chili powder
Six table spoons of brown sugar
One and a hailf teaspoons of salt
Twelve tablespoons of fresh lime juice
Six large garlic cloves, crushed with a garlic press
Six one and a half pound beef flank steaks
Eighteen large eight ounce red onions, cut into wedges
Six tablespoons of olive oil
Prepare the outdoor grill for direct grilling over medium heat or low fire. In a cup, mix the chili powder, brown sugar, salt, lime juice and garlic. Rub the chili-powder mixture on both sides of the steaks. In a large bowl, toss the onions with the olive oil. Place the steaks and onions on the hot grill rack. Grill the steaks, turning them once for twenty minutes, ten minutes on each side. Cook the onions, turning them occasionally until they are browned and “just” tender ( be sure to not overtenderise the onions.) Transfer the onions and steaks to a cutting board and let them stand for ten minutes. Thinly slice the steak and serve with the green onions, corn and grilled bread. Enjoy!
